SteirerKren Brûlée with Berries

Ingredients for 6 people: 

200 ml of milk
100 g of crème fraîche
300 ml of whipped cream
100 g of sugar
1 egg
6 yolks
30 g of SteirerKren
1 coffee spoon of wasabi paste
1/2 a vanilla pod, scraped out
pinch of salt
cane sugar for lighting
300 g of fresh berries, e.g. strawberries, blueberries and raspberries
4 cl of Grand Marnier orange liqueur

Preparation: 

Mix ingredients together without yolks and heat at 70°C, then quickly stir in yolks, SteirerKren and wasabi paste. Leave to stand for 1 hour, strain, pour into forms or dessert bowls and cover with transparent film. Bake to thicken in a convection oven for approx. 60–70 minutes at 100°C and then leave to cool, ideally for 3 hours. Sprinkle with cane sugar, light with the help of a blowtorch. Serve immediately with the berries marinated with Grand Marnier because otherwise the crunchy sugar would become soft again.
